  • 240ml dairy-free milk
  • 1 teaspoon apple cider vinegar
  • 210g self-raising flour
  • 50g cocoa powder
  • 100g caster sugar
  • 60ml sunflower oil
  • 210g dairy-free block butter
  • 200g icing sugar
  • 20ml aquafaba (chickpea brine)
  • 4 ground Oreo crumbs
  • 100g dairy-free dark chocolate
  • White chocolate buttons
  • 1 pack of Oreo cookies

Instructions

  1. Preheat your oven to 180°C (350°F) and line a cupcake tin with liners.
  2. In a mixing bowl, combine dairy-free milk and apple cider vinegar; let sit for 5 minutes to curdle. Add sunflower oil and whisk until combined.
  3. In another bowl, mix self-raising flour, cocoa powder, caster sugar, baking powder, and bicarbonate of soda. Gradually add this mixture to the wet ingredients and stir until just combined.
  4. Pour the batter into cupcake liners, filling them two-thirds full. Bake for 20-25 minutes or until a toothpick comes out clean. Allow cooling completely.
  5. For the frosting, beat together softened dairy-free block butter and icing sugar until fluffy. Add aquafaba and mix until smooth.
  6. Frost each cupcake generously with the vegan frosting, sprinkle with ground Oreo crumbs, drizzle melted dairy-free dark chocolate on top, and use white chocolate buttons as eyes.
