  • 500g minced chicken
  • 1 egg
  • 1 cup breadcrumbs
  • 2 tbsp milk
  • 2 cloves garlic, finely chopped
  • 1 tsp Italian herb blend
  • Salt & pepper to taste
  • 1 tbsp olive oil for frying
  • 1 tbsp olive oil
  • 1 onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • 1 cup chicken stock
  • 1 cup heavy cream
  • 2 tbsp tomato paste
  • Fresh parsley, chopped

Instructions

  1. In a mixing bowl, combine minced chicken, egg, breadcrumbs, milk, chopped garlic, salt, pepper, and Italian herb blend. Mix well and form into small meatballs.
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Sear meatballs until golden brown on all sides. Remove from skillet and set aside.
  3. In the same skillet, add another tablespoon of olive oil. Sauté sliced onion and bell peppers until softened.
  4. Stir in minced garlic and smoked paprika; cook for an additional minute.
  5. Add chicken stock and heavy cream to the skillet; bring to a simmer.
  6. Return meatballs to the skillet; cover and simmer for about 10–12 minutes until cooked through.
