Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8-inch round cake pan.
  2. In a medium bowl, sift together flour, baking powder, and salt; set aside.
  3. In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Stir in lemon zest.
  4. Gradually add dry ingredients to the wet mixture, alternating with milk and lemon juice until just combined.
  5. Pour batter into the prepared pan; smooth the top. Bake for 40-45 minutes or until a toothpick comes out clean.
