  • ½ cup mascarpone cheese (or cream cheese)
  • ¼ cup powdered sugar
  • ¼ cup chocolate hazelnut spread
  • 4 oz dark chocolate, chopped
  • ½ cup heavy cream
  • Toasted hazelnuts, chopped (optional)
  • Shaved dark chocolate (optional)
  • Cocoa powder for dusting (optional)

Instructions

  1. Preheat the oven to 250°F (120°C) and line two baking sheets with parchment paper, drawing three 8-inch circles on each.
  2. Beat room temperature egg whites until soft peaks form, gradually adding sugar until stiff peaks form. Fold in cocoa powder, vinegar, cornstarch, vanilla extract, and chopped dark chocolate.
  3. Divide meringue among the circles and bake for about 1 hour 15 minutes. Turn off the oven and let cool inside.
  4. For hazelnut cream, beat heavy cream, mascarpone cheese, powdered sugar, hazelnut spread, and vanilla until soft peaks form; chill until ready to use.
  5. Prepare ganache by heating heavy cream until steaming, then pouring it over chopped dark chocolate. Stir until smooth.
  6. Assemble: Layer meringues with hazelnut cream and drizzle ganache in between layers; top with remaining cream and ganache.
