  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder

  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 large egg
  • ½ cup buttermilk (or milk with vinegar)
  • ½ cup vegetable oil
  • ½ cup hot water or coffee
  • 1 teaspoon vanilla extract
  • ½ cup vegan marshmallow fluff
  • 1 cup graham cracker crumbs
  • 2 tablespoons melted unsalted butter
  • 3 large egg whites
  • ¾ cup granulated sugar
  • ¼ teaspoon cream of tartar
  • Mini chocolate chips for decoration

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add egg, buttermilk, vegetable oil, and vanilla; mix until smooth. Stir in hot water or coffee.
  3. Fill muffin liners with batter and bake for 18–20 minutes until a toothpick comes out clean. Allow cooling completely.
  4. Mix graham cracker crumbs with melted butter until sandy; set aside.
  5. Remove centers from cooled cupcakes and fill with vegan marshmallow fluff.
  6. For the meringue topping, whisk egg whites, sugar, and cream of tartar over simmering water until sugar dissolves. Beat until stiff peaks form; add vanilla extract.
  7. Sprinkle cupcakes with graham cracker crumbs and pipe meringue into ghost shapes. Use mini chocolate chips for eyes.
