  • 3.4 lb bone-in lamb shoulder, trimmed
  • Salt & freshly ground black pepper
  • 6 cloves garlic, smashed
  • 3 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 tbsp olive oil
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Season the lamb shoulder generously with salt and black pepper.
  3. In a bowl, combine smashed garlic, Dijon mustard, honey, olive oil, rosemary, thyme, and bay leaf; mix well.
  4. Rub the mixture all over the lamb shoulder and place it in a roasting pan with the broth around it.
  5. Cover with aluminum foil and roast for 3-4 hours until fork-tender.
  6. Remove the foil during the last 30 minutes to achieve a caramelized exterior.
  7. Let the lamb rest for at least 15 minutes before slicing and serving.
