  • 2 tbsp vegetable oil
  • 1 medium yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp red curry paste
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • 1/2 tsp chili flakes (optional)
  • 1 (13.5 oz) can coconut milk
  • 1/2 cup beef broth
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar

Instructions

  1. Gather all ingredients and slice the beef, chop the onion, mince the garlic, and grate the ginger.
  2. Heat vegetable oil in a large skillet over medium-high heat. Sear the sliced beef in batches until browned (4-5 minutes). Remove and set aside.
  3. In the same skillet, sauté the onion until translucent (3-4 minutes). Add garlic and ginger; cook for another minute.
  4. Stir in red curry paste, ground cumin, turmeric, and optional chili flakes; cook for about 2 minutes.
  5. Pour in coconut milk and beef broth, then return seared beef to the skillet along with soy sauce and brown sugar.
  6. Bring to a simmer, reduce heat to low, and cook uncovered for about 15-20 minutes until slightly thickened.
  7. Serve hot over fragrant jasmine rice with garlic naan on the side.
