2 tablespoons olive oil
1 medium onion, diced
3 cloves garlic, minced
2 cans (14 oz each) diced tomatoes
2 cups vegetable broth
1 teaspoon dried basil
Salt and pepper to taste
4 slices sourdough bread
4 slices cheddar cheese
2 tablespoons butter
Instructions
Heat olive oil in a large pot over medium heat. Sauté the diced onion until translucent (about 5 minutes), then add minced garlic and cook for another minute.
Stir in diced tomatoes, vegetable broth, dried basil, salt, and pepper. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes.
Meanwhile, butter one side of each slice of bread. Place cheddar cheese between two slices (buttered sides out) and grill in a skillet over medium heat until golden brown and cheese is melted (about 3 minutes per side). Cut into bite-sized cubes.
Taste the soup for seasoning adjustments and serve hot topped with grilled cheese cubes.
