  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 cans (14 oz each) diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 4 slices sourdough bread
  • 4 slices cheddar cheese
  • 2 tablespoons butter

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onion until translucent (about 5 minutes), then add minced garlic and cook for another minute.
  2. Stir in diced tomatoes, vegetable broth, dried basil, salt, and pepper. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes.
  3. Meanwhile, butter one side of each slice of bread. Place cheddar cheese between two slices (buttered sides out) and grill in a skillet over medium heat until golden brown and cheese is melted (about 3 minutes per side). Cut into bite-sized cubes.
  4. Taste the soup for seasoning adjustments and serve hot topped with grilled cheese cubes.
