  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 2 medium sweet potatoes, peeled and diced
  • 2 cans (15 ounces each) black beans, drained and rinsed
  • 1 can (28 ounces) diced tomatoes
  • 2 cups vegetable broth
  • 2 chipotle peppers in adobo sauce, minced (plus 1 tablespoon sauce)
  • 2 teaspoons ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cinnamon (optional)
  • Salt and black pepper, to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and sauté for about 4–5 minutes until softened.
  2. Stir in garlic and red bell pepper; cook for another 2 minutes until fragrant.
  3. Add sweet potatoes, black beans, diced tomatoes, vegetable broth, chipotle peppers, adobo sauce, cumin, smoked paprika, chili powder, and cinnamon. Season with salt and pepper.
  4. Bring the mixture to a boil then reduce heat to low. Cover and let simmer for 25–30 minutes until sweet potatoes are tender.
  5. Stir in lime juice before serving. Adjust seasoning as needed and serve hot with fresh cilantro and your choice of toppings.
