  • 2 large eggs
  • 24 ounces cream cheese (brick-style)
  • ¾ cup sour cream
  • ¾ cup granulated sugar
  • 125 grams all-purpose flour
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ⅓ cup canola or vegetable oil
  • 1 teaspoon pure vanilla extract
  • ¾ cup light brown sugar, packed
  • ¼ teaspoon salt
  • ¼ teaspoon baking powder
  • ¼ teaspoon baking soda

Instructions

  1. Preheat the oven to 350°F (177°C). Prepare a 9-inch springform pan with parchment paper.
  2. In a bowl, mix eggs, sugars, sour cream, oil, and vanilla until smooth. In another bowl, combine flour, baking powder, baking soda, salt, and spices. Fold dry ingredients into wet mixture and add carrots.
  3. Pour batter into prepared pan and bake for 30–35 minutes until a toothpick comes out clean. Cool for 20–25 minutes.
  4. For the cheesecake layer, beat softened cream cheese until smooth. Add sour cream and mix in sugar and vanilla. Gradually add lightly beaten eggs until combined.
  5. Assemble by pouring cheesecake mixture over cooled carrot cake layer in the springform pan.
  6. Bake at 325°F (163°C) in a water bath for 55–65 minutes until edges are set but center slightly wobbles. Let cool before refrigerating for at least 5–6 hours or overnight.
