  • 3 tablespoons olive oil
  • 200 g ricotta cheese (about 1 cup)
  • 80 g cranberry sauce
  • 2 tablespoons honey
  • Fresh thyme leaves for garnish

Instructions

  1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
  2. Toss the butternut squash cubes in a mixing bowl with olive oil, honey, salt, and pepper until evenly coated.
  3. Spread the squash on the prepared baking tray and roast for 30–35 minutes, stirring halfway through until golden brown.
  4. In a small bowl, whisk together cranberry sauce and remaining honey until smooth.
  5. Once roasted, transfer the squash to a serving dish, add dollops of ricotta cheese, and drizzle with the cranberry mixture.
